Quick question. I just saw this setting in MS Teams for the first time. and am not sure what it does. Do you happen to know what it's supposed to do?

Channels 2.0 is a project to introduce a more familiar model that better supports channels where users can synchronously collaborate on many ongoing conversations. They had things like:
- The compose box and recent posts will appear at the top of the page. It’s much easier to
start a new post, keep up with the latest conversations and participate - giving users the confidence that they’ve not missed anything. - Every post is now a true conversation users can focus on. Users can navigate to a conversation
view that makes the discussion more engaging and synchronous, just like a chat. Users can also pop out the post, keep an eye on the discussion, while continuing to work on other topics. - Choose from a new range of post types such as announcements to highlight a milestone or to
recognize a team’s accomplishment. This will give users more efficient ways to engage with other
channel members and be more expressive. - Pin posts to make it easy for everyone to know what’s important in the channel and quickly reference it.
Hope this helps to understand a little bit more about channels 2.0!

This change is absolutely horrible from a developer standpoint. For years we pushed back to use Slack instead of Teams, however Enterprise IT chose Teams because it was included in the 0365 license.
The posts system in 2.0 is even _less_ like a chat interface, and as someone who relies in communicating with developers across multiple time zones... it just strengthens my resolve to move our team to Slack.

I completely understand your point of view, but like everything, when there is a change some people like and others not even close.. me personally, I like the new view for channels - the different posts are more evident and seems more organized! But again, it's my personal view about it.
I dont know what your Org is, but if you need to make changes in the features/views, you can always request a DCR for MS support and discuss the changes to be apply to your tenant.
