I've been criticizing Microsoft for owning the problem and doing nothing about it. I did follow the suggestion from Sven and updated the driver for my Intel Wireless Bluetooth device. With driver version 22.20.0.3 - 2020-11-27 the problem seem to be there no more.
With that I was wrong in my opinion that Microsoft is to blame for the issue and that you deliberately would ignore the problems caused. I apologize for that.

My SOLUTION : I have a Plantronics BackBeat Pro 2 bluetooth headset.
I have the latest Intel Bluetooth drivers for Windows 11.
When I use teams I don't want to use the headset microphone (which is shit), I prefer to use my high quality USB microphone. I have disabled the BB Pro 2 microphone input in sound settings, but have enabled the BB Pro 2 headphones output.
As soon as I join a meeting in Teams... all sound stops working (including other apps like youtube on chrome).
If I re-enable the headset microphone and select the headset mic in Teams... all sound starts working again in Teams.
If I want it to work, I have to re-enable the headset mic.
Otherwise for the time being I am just using teams in the browser...which is not ideal, but at least I can use my USB Microphone.
Hopefully Microsoft fixes teams so that you are not forced to use both the headphones and microphone of the same headset.

This is IT. I have lost 4h from my life chasing this. This is the fix!
Even if you use the headphones for audio output only, you still have to have the microphone enabled, even if it not selected / or in use.
