Limiting the number of persons who can choose one answer

asgobeil no it's not possible with Forms. You would need a flow in Power Automate to add each response to a list in SharePoint and count those, and if there were more than x then send an email back saying the session is full.

RobElliottIt's a bummer this feature isn't possible in Microsoft forms. It would be a nice capability in our space.

amtPBM since my earlier answer I've built a system in Power Apps that checks the number of registered participants for an event and if has reached the maximum it disables the register button. It's more user-friendly and less clunky than the Power Automate solution I gave earlier.
But, as you say, it would be good to have this in Forms as more people build forms in that than in Power Apps..
