Disable the staff selection option -Anyone-

Ugh - I am wasting soooo much time. I love these explanations, but since NathanWatts​' 4/14/2022 reply, this is no longer an option:
2. Under the Booking Page "Default Scheduling Policy", make sure that the "Staff Control" option is UNCHECKED.
Can't figure out how to get rid of that "anyone" option for a client to book a time. What am I missing???
