I don't know if it is still relevant but you can customize the domain via OWA Mailbox Policy, this applies generally as well as individually for each user
Set-OwaMailboxPolicy -Identity “<custom-policy-name>” -BookingsMailboxDomain “<Custom-domain-name>"
