Bookings application for booking on behalf of staff

I have a requirement to use MS Bookings where the bookings are made on behalf of the customer by an admin team in a medical setting, choosing from the list of services and assigning staff to each booking.

My question is how this would work in terms of sending the end customer the confirmation email with the ics file and cc'ing their manager because they are not the person booking the appointment. I've worked out you can use custom fields to record the customer email and manager email but in terms of automating responses to them, how could you do that? A side effect is that the Customers list would not populate with customers but with the admin team members as they are the ones booking appointments, so how can we solve this?
