Ad-hoc Meetings in Bookings

In Bookings - we run 1:1 private sessions for research projects on ad-hoc dates.  Is it possible to only give access to specific appointments times on specific dates, and block the rest of the calendar out so the public can't book sessions on other days? What I want to do is set customised hours for a staff member across 1 or 2 days and with set appointments times on those days.  I don't want this to be recurring weekly.  I want the calendar to be blocked out for all other days/times on the calendar expect for those indicated below.  Is this possible?
