Set default mail profile in iOS native mail client
Intune managed iOS device using iOS native mail. Users are unable to set a default mail profile. This option is not available. https://learn.microsoft.com/en-us/answers/questions/172481/set-default-mail-account-for-ios-devices-in-intune
Is this an app config or app protection policy?

You can achieve this by configuring the email profile on iOS devices and. And if you are enforcing it then mark it is required in compliance policy,
