Did you happen to change the primary email address? If so, the only way to get Outlook to reflect the new value is by recreating the profile. Or playing with tools such as MFCMAPI, but lets not get there :)

No, the primary email address was not changed, but it's a computer used by more than one users (each user use it's own Windows profile)

Office on a single machine is activated ones and is tied to that user, so maybe wrong display name comes from that. For a shared PC one can use shared activation https://docs.microsoft.com/en-us/deployoffice/overview-of-shared-computer-activation-for-office-365-proplus
