Track email folder movement across Outlook shared mailboxes

If you have mailbox auditing enabled, with the corresponding operations included, reviewing the audit logs should show you who/when did this: https://docs.microsoft.com/en-us/office365/securitycompliance/enable-mailbox-auditing
But if you are just enabling it, it will not include details for past actions.
