I really don't understand why Microsoft couldn't have CoPilot be configured to use a specific Search Vertical. At least then users could've still had search functionality within the site, but the content from the site would not appear in the global search or copilot.
The restricted SharePoint search feature is a "joke". It is not built for scale. Max 100 sites or 100 hub site
