Thanks for such a quick reply that's very helpful! Just to clarify, so even with just one E1 license, the number of external users is unlimited?

With an E1 (or any of the E plans) you get unlimited external sharing, so you won't have any limit there.
As far as employees, even if they don't have a company email address you still need to license them. "An external user is someone outside your organization who can access your SharePoint Online sites and documents but does not have a license for your SharePoint Online or Microsoft Office 365 subscription. External Sharing is possible with users of other tenants?

Yes, you can share to any external users of other tenants.

In other words, you can share with people who do not themselves use Office 365.
