restoring deleted items in mailbox
using retention policy, If we decided to retain only for all mailbox to have 2017 emails to be retained and the rest older than that to be deleted, how quick will it be unrecoverable or restorable from the system once deleted?
and how to restore?

Depends on the type of policy you configure, but in general if you configure a "delete" action items might not be recoverable at all after the retention period has expired.
