Remote (hybrid) mailbox moves from Exchange 2007 to Office 365

1. Yes, Install Exchange 2013 Hybrid on the infrastructure, you will need at least Ex 2007 SP3.

I advise that you create all scenario and test it, create a test user, move mailbox, take screenshoots to document and then communicate to the end users what are going to happen and how.
The communication is very important and tests also.
