Hi, Our tenant language is Finnish. My user profile language is also Finnish, but still when I create Office365 Group, the group Sharepoint site language is English and there is no way for me to ...

Afaik you can't change the default language afterwards! Due to some reason your default SharePoint language is English!

When users create new Team sites from SharePoint you can override this and set another language!

Regarding time zone settings you can set the default in the new sharepoint admin center
