The M365 Apps Usage report (https://admin.microsoft.com/Adminportal/Home?#/reportsUsage/ProPlusUsage) and the Email app usage (https://admin.microsoft.com/Adminportal/Home?#/reportsUsage/EmailClients) reports are your best bets here. Other than that, you can leverage the Azure AD Sign-in logs.
