Only the expired trial subscription will be removed, the license reassignment issue is a known side effect of the Microsoft 365 subscription lifecycle, and the fix you applied (reassigning the paid license) is sufficient. To prevent recurrence, just confirm all users are assigned to active, paid licenses and monitor the Admin Center after subscription expirations.
