The problem could be that the change you made to the mailbox properties did not replicate to the domain controllers serving the server that hosted the active copy of the mailbox for a little time. That's the reason why (even on-premises) you often see warnings that a change might not be effective for up to 60 minutes... But there are other complicating factors as well, all of which you can and should expect inside an infrastructrure as massive and as complex as Office 365.
