How to Create Mailbox Exclusions for Microsoft 365 Sensitivity Label Policies
The GUI of the Microsoft Purview compliance center doesn’t support the exclusion of selected mailboxes when the special All target is used. However, you can use PowerShell to add mailbox exclusions to sensitivity label policies, including adding the members of a group as exclusions.

TonyRedmond Will this Exchange PowerShell command apply to all Label Policies that turn on the labels in O365 applications (e.g., Word, Excel, PowerPoint, etc.)? We are looking for a way to exclude certain users from having the labels published to them in O365 apps. Not sure if this is the solution to that. Thanks in advance!

- Yes. If a user account is excluded from seeing a label, they won't see the labels in the Office apps.
