You may want to try Copilot in Word. He can have conversations with Copilot to help him be organized, create outlines, and even help with grammar. I'm not advocating that Copilot create the assignments for him, but act more as a coach. Additionally, you might want to use the Copilot Writing Coach, available in the Microsoft 365 Copilot App.
