Change default font organisation wide and over all software?
Hey
Is it anyhow possible to set the Default font for all users / Software (Excel, Word, PowerPoint,...)

No this isn't possible, nothing built-in to Office 365 will set the default font for apps per your suggestion. There may be ways to do this by other means such as the suggestions here.
