Why did new notes on an old spreadsheet not automatically have yellow backgrounds?
I checked on Beta Excel 365 for Windows, notes still have yellow background by default.
There is no setting in Options to change the notes background color, but in general that's possible. Here Change the Appearance of Cell Notes - Excel Tips - MrExcel Publishing are tricks to do that locally and globally, at the end is how to go back to yellow.

SergeiBaklan SteveW1090 - I am not experiencing the problem described. I just created some new notes on my Mac after updating to the latest beta version, and they show the standard yellow background.
If this is still happening for you, I recommend that you send feedback to Microsoft by clicking the Help menu > Feedback > Report a problem. Make sure to mention something like "since the last update", as this may get more attention than if you only describe the symptom. Include a screen shot with your feedback.
For Mac, it is not possible to format the background as it is on Windows, so you're not missing any step in that regard. This is due to an architectural limitation in Excel for Mac since around 2019.
