two colours formatting within a cell (like a flag and not a 2-coloured pattern)

Excel is aimed more to support calculation than visual effects (PowerPoint has some cute effects). Some limited effects are possible using a conditional format data bar
Alternatively you could use an area chart, stripped of annotation and axes and scaled down to cell size.
Another static option is to insert box symbols, let say 6
and in cell edit mode color them.
If Aptos font is not available perhaps it could be in some another ones, at least it shall be Wingdings

I have ready that that way to insert things might become deprecated, which is absolutely ....
In another answer to that "grey-out" problem suggest that one should invoke something similar via the formula editor....

Insert 'symbols' icon is grey-ed out on my MacOs Version 16.85 and also on my other excel under Window (office 2019)
We insert not icons but characters, as any other text. Alternatively you may add boxes by
=REPT(CHAR(103),6)and apply Webdings font.
Colouring of the text in cell edit mode definitely shall work. On Windows, includes Excel 2019, for sure.
