Do you have any ideas on why the document that mtarler uploaded, if I alter it the column on Tab 'Original Data' Column H 'date-time' breaks? Or how to fix?

I don't know for sure why it broke but may be because this time when you pasted the value it was actually recognized as a date/timestamp instead of text or may because of unrecognized characters in the UTC Event Timestamp. If you include a sheet example with it broken we can check for that.
In the attached I added to the formula to check if it already recognized as a number (i.e. date/time) using the following formula:
=IF(ISNUMBER([@[UTC Event Timestamp]]),[@[UTC Event Timestamp]],DATEVALUE([@[UTC Event Timestamp]])+TIMEVALUE([@[UTC Event Timestamp]]))
