Hello bradbeliveau,
Check-out and co-authoring are separate collaboration models. Microsoft recommends not checking out a file when using co-authoring.
For co-authoring, keep AutoSave enabled and make sure everyone is using a supported version of Excel.

The issue still occurs when not using the check out feature. Users are reporting that simple data entry into their files is not saving. I can also attest that even when not checking out files, and nobody else is in the file, and autosave is enabled, data is sometimes lost.
