You can drop the WorksheetFunction portion for easier readability:
New_text = Application.Substitute(Cell_reference,"TOTAL","")

I heard a worksheet function: "SUBSTITUTE" which can perform your task:
SUBSTITUE(A1,"TOTAL","")
