I'm trying to find a way for each individual due date to change to green (text or cell fill) once the due date has been reached. It then needs to reset on payday.

Yes.
It's called conditional formatting, and is readily done. Here's a link to some instructions on how it can work. See if you can implement it following their instructions, but feel free to come back if more help is needed.
