No "Layout & Print" tab on the Field Settings dialog box for a pivot table field.
As a consequence I cannot use the Show item labels in outline form option. Note: I am running Excel 16.84 on MacOS 14.3
As an alternative, you can specify the layout in the Report Layout drop-down in the Layout group of the Design tab of the ribbon.
(Setting the properties for one row or column field sets it for all of them)

Still this is not covering my need as I want to mix, within the same Pivot table, columns in outline and in tabular mode.
It looks like it was a limitation of the MacOs version of Excel.As far as I know, that mix is not possible on Windows either...
