Do you mean convert $US to GBP or only change currency symbol?

To permanently change the US dollar to Pound, kindly follow the steps below
1. Select an empty cell
2. Click on Symbol in Symbols group of the Insert tab
3. Select currency symbols from the subsect dropdown.
4. Locate the currency of your choice and click on it.
5. Click Insert and close respectively

By now,you will see the currency inserted into the selected empty cell.
6. Copy the currency symbol
7. Type in Control Panel on your system
8. Under Clock, Language and Region,click on change date, time formatting
9. Click on Additional Settings
10. Click on the Currency tab
11. Paste the Currency into the Currency Symbol box.
12. Hit the enter key on the keyboard.

Note,you may have to repeat steps 8 to 12 twice before the changes is effected.

Go back to your Excel spreadsheet and select any cells with numeric values. Execute CTRL + SHIFT + 4. This will show the currency you specified.. And it is permanent.

Highlight the range you want to change then in the Home tab, and Number section, you will find the Currency format. Select this and change the symbol from $ to pound sign.
If you want to change instances of text entries USD, use find / replace function (Ctrl + H), enter USD in the find field and GBP in the replace - click replace all.
