I assume you really mean "....will subtract correctly what is used...."  (i.e., you're not passing a judgment on whether the item removed from the inventory was then properly deployed, though there are situations where that might be desired as well)

(an aside here: to use Excel correctly, you'll find you need to be a bit of a nit-picker even about the words you use to describe what you're trying to do; it's often helpful, more so the more complicated the workbook desired, to have a good verbal description first before attempting to wrote formulas)

I also assume you would want to add what is new to said inventory.

I've attached two sample inventory trackers created in response to prior questions. The SimpleInventory is probably the closest to what you'd want, yet even it is designed to cover three different locations.

What I'd ask of you, if you wish more help, is that you put together as best you can a workbook that represents your current way of tracking, your current way of thinking about this (if you do it on paper now, just put that arrangement of the data into an Excel sheet). The subtraction you're asking about is simple, as is the addition, but first and foremost is what arrangement makes sense to YOU.
