I'm having trouble finding the LAMBDA function

So far lambdas are available for Office Insiders only, that means you shall be on Beta or at least on Current (Preview) channel. Build number practically doesn't matter.

In addition, right now lambda is announced for Current channel https://techcommunity.microsoft.com/t5/excel-blog/announcing-lambdas-to-production-and-advanced-formula/bc-p/3146316#M2543 .
