How do I prevent an email address used in a document from changing colors, font and becoming a hyperlink??

Select File > Options.
Select Proofing.
Click AutoCorrect Options...
Activate the AutoFormat As You Type tab.
Clear the check box 'Internet and network paths with hyperlinks'.
Click OK, then OK.
Remark: this will stop Excel converting website addresses to hyperlinks too.
