I have a document that I use daily and just change the date on it. In the desktop app it would save each day as a new file so I can refer back to it later. In the web app it just renames the document...
After opening the latest file, but before doing anything else, click File, Save As
I've created a suggestion to Microsoft to have a rename option in that same small window, please vote if you like the idea:
