Excel crash on cell edit

Hey everyone, I'm experiencing some weird Excel behaviour where a crash occurs immediately after attempting to edit a cell value. To make sure I've got all the latest stuff, I've reinstalled the latest Office 2021 and left it in trial mode for now for testing. Did all the available Windows and Office updates and still cant shake the issue. Word and PowerPoint work just fine for comparison.

As a test, I've created a new .xlsx with some simple data and saved it with the freshly installed version to eliminate older spreadsheets causing problems. Same thing, I open the file press F2 or double click to edit a cell and Excel crashes to desktop. No error or any info whatsoever. After a undefined number of attempts, then it decides to cooperate and works just fine without a problem. After opening another file, same story all over again.

I was unable to google any solutions or cases that were of any use to me. The closest described problem had a suggestion to turn of "Automatic Flash Fill" in the options, but it makes no difference. Also tried with other versions, 2016 and 2019, same issue. Do any internal logs exist I can perhaps share to help with this? Any ideas are appreciated.
