the solution for this strange behaviour is a setting in the advanced Excel options. For whatever reason, this flag "For objects, show:" is set to "Nothing (hide objects)" in your workbook.
Once you set it to "All", the dropdwon arrows will re-appear.

I agree with NikolinoDE , a sample file would make things easier for us to help.
Apart from that, you could check if you have ticked this option:
Without, the dropdown-arrow would not appear.
