Custom data type does not appear in the ribbon
Hello, I was doing data cleaning when I saw a notification to create custom data type but I can't find the option in my power query, how do I activate it? (office 2021)

This functionality is only for 365 Create a data type (Power Query) - Microsoft Support
Not sure what do you mean under custom data type. In general you may declare data types selecting column(s) from that menu
or from menu when you click on icon left to the column name
SergeiBaklanOf course I understand that part and I know, I am referring to this option, which appears but does not appear in my tape even though I got the notification that I could do it
