How do i give a cell a choice of items to pick from? I would like to hit a cell and pick a color.

Data Validation allows you to set up a List which can then be used in a drop down.
When you say you want to pick a color what do you expect to happen? If you just want a list of colors then Data Validation on its own will be fine. But if you want the cell the color to somehow be applied to the cell then you will also need Conditional Formatting to be applied.
Attach a workbook and I can take a look.
