Microsoft 365 User Setup
This might be a dumb question, but I have found very little on best practices with activating features under the Microsoft 365 E5 or Office 365 E5 Active User setup. Is it best practices to activate all features under Office 365, Enterprise Mobility, and and Microsoft Defender?
That really depends, some organizations might have a requirement to disable specific services, others just assign the entire bundle. If you are paying for the full M365 suite, you might as well use it, if there are no blockers that is.
