Search and replace in word mac doesnt work as expected

Hi guys

Support couldnt help. Maybe someone else has a solution

I wrote << and went into find and replace to convert << to «. Instead of « Word makes it „
Its the german „ instead of the swiss «

I would expect the result to replace as i wrote it in the replace box.
