Windows 10 on ARM apps / Microsoft Store?

How can we find out which ARM64 apps are available in the Microsoft Store or on the web? So far I only know of VLC and Firefox.

Do you mean native ARM64 apps? As far as I know the Store doesn't have a way to flag native ARM apps yet, I believe it will just check whether your machine meets the system requirements (which will show both native and emulated ARM apps AFAIK).
