Thank you so much for quick response The only way I could fix the way the cells centred for the customer was to copy the table in to a word document to align all the cells to top .. copy back into the page and then format the table with the out of the box styles. but yep that was a bit of a faf! I had a call logged about a table that was not aligning the text to the top of the cells when added to a text app part in a modern SharePoint page.
