Please could you advise how and if possible to dual connect Surface hub 2 screens?

You can do that with Coordinated meeting. Most times Microsoft is explaining about this with a Surface Hub and a Teams Rooms on Windows.
But it also works with two Surface Hub. I did an installation with two 85" Surface Hub.
Looks great.

I did a video on how to set it up here: https://youtu.be/FYmprsFx8r4
You will need to have an account for each Surface Hub.
After I did this video, Microsoft has now made it possible to configure it directly on the surface Hub. Please make sure that you only enable audio on one of the Hubs.

Here is another video on Coordinated Meeting on how it works: https://youtu.be/bXlagd54DqY
Thanks very much Lars
