Modern Authentication Methods for Apple iMac

Hello. We have an iMac, iPhone and iPad all using the same Outlook account. On the iMac, we use Apple Mail. In changing the account authentication, do we lose our email history? Also, do we do this once or for each individual device? It is not clear what is actually being asked.
