Im new to Exchange and am setting up our company's emails. I used IMAP to migrate our email boxes to Exchange and that worked fine. Is it best to have people abandon their current IMAP emails and designate it as an Office Exchange email in their email program? Or does it even matter? For example I still have my current IMAP email set up in Outlook with it's new DNS settings. Should I remove that one and add it back as an Office Exchange email address?

If all your messages have been migrated and mail flow is currently being handled by Exchange Online, it's best to switch to it, yes.
