Changing Room display name and keeping existing email address

It's been requested to change some meeting room names from "room 1" to "room 1 - Billy Elliots room"

Is it possible to change how a meeting room is labelled in the GAL without changing UPN and Email address?

Yes, it's perfectly possible. If this is for Exchange on-premises and you have an Email Address policy configured, make sure the proxyaddresses arent being populated based on the display name value, or simply toggle the policy off for said room.
