Correct, Microsoft doesn't use customer data to train foundational AI models. Your instance of Copilot for M365 is grounded in your data (which is different from training the LLM), to the extent that you give it access (there are multiple ways to restrict access). The grounding enables Copilot to give you responses contextualized to your business. But your tenant and only your tenant benefits from this grounding on your data.

We have been sharing files via Teams and SharePoint for a long time and people may have access to files they shouldn't. In the context of Copilot, this means users may get responses relating to sensitive data. If there isn't a Microsoft tool to see this, is there a 3rd party tool that you recommend?

All Copilot for M365 prompts and responses are captured in the audit log, which is accessible to customers' administrators to search to identify whether specific content exists.
