Hello jarn_19,
here are some steps you can try to resolve your issue:
1. Convert the Table to Text: select the table containing the headings and convert it to regular text. You can do this by choosing the "Convert to Text" option in the "Layout" tab of the Table Tools.
Convert text to a table or a table to text - Microsoft Support2. Apply Heading Styles to the text: Once the table is converted to text, select the headings and apply the desired heading styles (e.g., Heading 1, Heading 2) using the "Styles" pane or the formatting options in the "Home" tab.
Apply styles - Microsoft Support3. Update the Navigation Pane: Enable the "Navigation Pane" option in the "Show" group of the "View" tab, and the headings should now appear in the navigation pane.
Use the Navigation pane in Word - Microsoft Support4. Verify that the navigation pane is set to show the appropriate level of headings. Click the drop-down arrow in the navigation pane, select "Headings," and choose the desired heading levels to be displayed.
5. Check that the navigation pane options are correctly configured. Go to the "View" tab, click the drop-down arrow in the "Navigation Pane" group, and select "Options." In the "Options" dialog box, make sure the "Show Heading Levels" option is selected and set to the desired level.

Leon Pavesic As you have found, the Navigation pane can't see headings that are inside table cells. This is a known limitation with pane. You can send feedback to Microsoft using the feedback facility in your version of Word (see https://support.microsoft.com/en-gb/office/how-do-i-give-feedback-on-microsoft-365-2b102d44-b43f-4dd2-9ff4-23cf144cfb11).
If converting the table to text is a possibility, that would work around the issue. However, I am assuming that you are using tables for a reason, so getting rid of the tables may not be an option.

See Problem #2 in my article on this with solutions/workarounds:
You may want to create a Table of Contents, which should reflect the headings.
