Formatting Properties only applied on Table and not whole document

If the same table style is applied to all of your tables, modifying the settings for the table header of that style would affect all tables, yes.
If only one table should have bold text in the header row, do not modify the table style. Instead, just add bold as direct formatting to that table. Select the row and press Ctrl+B.
Alternatively, you can of course use a different table style for the table that should be different.

Above is the table I am inserting in my document. This is the only table which has header row as bold whereas other tables in the document don't have header rows as bold. I am using Table Style to bold these header rows as shown below. However, when I do that the style gets applied to all the tables and all the header rows becomes bold.
