What options in Performance Monitor to select to find a slowdown when I am in apps

I am in Windows 11 Enterprise (21H2), Microsoft 365 (2202), 256GB SSD (Bit locker), 16GB memory, OneDrive for Business, Microsoft Edge (108) and my system OFTEN is slow.  Like when I was typing, I typed and the characters didn't keep up.  The system "stalled" and waited.  I have seen explorer.exe "hang" (not responding) in Task Manager, and Microsoft Teams (1.5.00.33362) high utilization and OneDrive.exe high utilization and our antivirus, McAfee agent 5.7.4.399.

I am trying to figure out what to check in Performance Monitory to try to find out what is possibly slowing down the system.  

I run sfc /scannow and Dism /Online /Cleanup-Image /RestoreHealth from time to time to try to "fix" things.  I also clear out %temp% to try to assist.

Like then, I just went to click on explorer in the taskbar, and it took maybe 3 seconds.  I haven't changed anything except type in here. I can hear my HP EliteBook 830 G5 Notebook PC fans "whirring"

I have run an HP diagnostics tool check as well, and it only finds firmware updates (which I update),
