I continued to dig deeper into this issue and since we have volume licenses for Windows 11 Pro I remembered to reinstall a computer with Windows 11 Pro with the ISO available in our Microsoft account. With this installation I never had any problems with RDP access to these computers again.
I think the problem has to do with the version of Windows 11 Pro that comes pre-installed on the computers we buy and which is apparently the Windows 11 for Workstations version.
